As an important part of the food industry, broth and soup carry people's pursuit of deliciousness and the inheritance of traditional flavors. Its production process is rigorous and scientific, and every link is related to the quality and flavor of the final product.

The first is the selection of raw materials. High-quality meat is the basis of broth and soup, usually fresh, disease-free animal meat, such as chicken, beef, lamb, etc. Vegetables are also indispensable ingredients, such as carrots, onions, celery, etc., which can add rich taste and nutrients to the soup.

The next step is the pretreatment stage. Meat needs to be cleaned and cut, and impurities such as hair and fascia are removed, and then cut into appropriate sizes. Vegetables should be carefully washed and cut into corresponding dices, pieces or strips.

Stewing is the key step. Put the processed meat and vegetables into the pot and add appropriate amount of water. Depending on the different recipes and flavors, appropriate amounts of spices may also be added, such as star anise, cinnamon, pepper, etc. Then simmer slowly over low heat to fully release the nutrients in the meat and blend with the sweetness of the vegetables and the aroma of the spices. This process takes a long time, usually several hours or even longer, to ensure the richness and deliciousness of the broth.

After the broth is stewed, it needs to be filtered. By filtering, the solid impurities in the soup are removed to obtain a clear soup. The filtered soup is then concentrated and its concentration is adjusted according to the needs of the product.

Then comes the blending process. In order to maintain the stability of the taste of the broth or soup, it will be seasoned strictly according to the recipe, and appropriate amounts of salt, sugar, MSG and other seasonings may be added to adjust the taste.

Finally, packaging and quality inspection. The blended broth/soup is packaged according to the specified packaging specifications to ensure that the product is not contaminated during transportation and storage. After packaging, strict quality inspections are also required, such as physical and chemical index inspections, microbial inspections, etc. Only products that meet quality standards can enter the market.

Understanding the production process of broth/soup can better appreciate the ingenuity and science behind this traditional delicacy.
